My guess, here, is that your VNC server is listening on both 127.0.0.1 and the IP address of your Pi. So, your SSH session is going from 127.0.0.0:5900 on your client machine to either 127.0.0.1:5900 from the perspective of the SSH daemon you're connecting to, or the IP address of the SSH daemon you're connecting to. The source port is not affected, that's the port to which the VNC server should reply to on your client system, so that the TCP handshake, and all subsequent traffic, can return. SSH port forwarding forwards the destination port of a process from your localhost on the SSH client to an IP address you specify (technically, it can also direct destination ports from the SSH server back to the client, if, say you had a database or something on your client, and wanted a process on the Pi to access it.
